- 36grams salt-reduced French onion soup mix
- 500grams cream cheese, softened
- 2 lemons, zested, juiced, (plus 2 extra lemons, halved, to serve)
- 2tablespoons drained capers
- 4 multigrain bagels, thinly sliced crossways into rounds
- 1/3 cup Woolworths extra virgin olive oil
- 750grams white washed baby potatoes
- 1 bunch broccolini, trimmed, halved
- 300grams smoked salmon slices
- 1 bunch radish, trimmed, halved
- 1/2 cup baby cucumbers, halved lengthways
- 1/2 bunch Dutch carrots, trimmed, scrubbed, halved lengthways
- 1 red onion, thinly sliced

Description
This colourful platter with bagels, salmon and French onion dip is a brilliant brunch idea and a great way to use up small amounts of veg in your fridge.
Method
Step 1 of 5
Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper.
Step 2 of 5
Place bagel, in a single layer, on tray and drizzle with 1/4 cup oil. Bake for
10 minutes or until golden and crisp. Set aside to cool.
Step 3 of 5
Meanwhile, place potatoes in a large saucepan and cover with cold water. Bring to the boil over high heat. Boil for 15 minutes, adding broccolini to pan
for the last 2 minutes of cooking. Drain. Refresh under cold water. Halve potatoes.
Step 4 of 5
Place soup mix in a large bowl. Add 2/3 cup boiling water, then stir to combine. Add cream cheese, zest and lemon juice, then stir until smooth. Season. Top with capers.
Step 5 of 5
Arrange bagel crisps, French onion spread, potato, broccolini, salmon, radish, cucumber, carrot, onion and extra lemon halves on a large platter. Drizzle over remaining oil and serve.
