  • 1 carrot, grated
  • 1 large zucchini, grated
  • 1 small onion, finely chopped
  • 1tablespoons olive oil
  • 4 eggs, whisked
  • 1 garlic clove, crushed
  • 1 1/2 cup tasty cheese, grated

Method

Step 1 of 3

Preheat oven to 180°C. Grease and line a 20cm square pan or ovenproof dish. Heat oil in a large frying pan, over medium heat. Add onion and garlic and cook gently for a few minutes or until soft. Add the carrot and zucchini and cook, stirring occasionally, for 3 minutes.

Step 2 of 3

Transfer to a bowl. Add rice, egg and 1 cup of cheese and season to taste. Stir well to combine.

Step 3 of 3

Press mixture into pan. Top with remaining cheese. Bake for 35 minutes, or until mixture has set and top is golden. Cut into squares or slices.
