Description
Try this easy recipe for a one-dish zucchini slice. It's tasty, quick and there'll be minimal cleaning up. It's a win-win.
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Grease and line a 22 x 28cm (6cm deep) baking dish with baking paper.
Step 2 of 3
Place flour in dish. Season with pepper. Add two-thirds of the zucchini and toss to combine. Add eggs and chickpeas, then mix with a fork until well combined.
Step 3 of 3
Scatter over cheese and remaining zucchini. Bake for 25 minutes or until golden and set. Slice and serve with salad leaves.
