For the croutons
  • 2 slices crusty bread, cubed
  • 2teaspoons garlic salt
  • 2teaspoons dried mixed herbs
  • 3tablespoons olive oil
For the dressing
  • 2 cloves garlic, crushed
  • 2tablespoons capers, drained
  • 2tablespoons lemon juice
  • 2teaspoons Dijon mustard
  • 1teaspoons honey
  • 8tablespoons Parmesan cheese, grated
  • 1/3 cup natural yoghurt
  • 1 pinch salt
  • 1 pinch pepper
  • 2 red apples, cored and diced
  • 4 celery stalks, thinly sliced
  • 1 head cos lettuce, leaves washed and roughly torn
  • 4 spring onions, thinly sliced
  • 1 bunch chives, chopped
  • 4 eggs, hard-boiled , shelled and halved (to garnish)

Method

Step 1 of 7

First make the croutons. Place the cubes of bread into a bowl and sprinkle over the garlic salt and dried herbs. Drizzle with the olive oil and toss to coat evenly.

Step 2 of 7

Place the croutons on a baking sheet in a single layer and bake in a preheated oven, 200°C, Gas Mark 6, for 10-12 minutes or until lightly browned and crisp. Remove from the oven and set aside.

Meanwhile make the dressing. Place the garlic, capers, lemon juice, mustard, sugar or honey, Parmesan and yoghurt in a blender and whizz till smooth. Season with black pepper. Chill until ready to use (you can make the dressing up to a day in advance, if desired).

Place the apples, celery, lettuce, spring onions and chives in a wide salad bowl.

Drizzle the dressing over the salad ingredients and toss to mix well.

Garnish with the halved eggs and top with the garlic and herb croutons.

Step 7 of 7

Place the leaves from 2 romaine or cos lettuces in a bowl with 6 sliced spring onions, 2 sliced celery stalks and 1 sliced cucumber. Drizzle over 8 tablespoons ready-made Caesar salad dressing, scatter over 100 g ready-made croutons, season, toss to mix well and serve.
