  • 1 sheet frozen puff pastry
  • 1teaspoons vegeta stock powder (to season)
  • 2tablespoons basil leaves (to serve)
  • 1/2 small red capsicum, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1 small zucchini, thinly sliced
  • 2teaspoons olive oil
  • 2tablespoons tomato paste (or passata)
  • 1/4 cup cheese, grated
  • 1/2 small sweet potato, thinly sliced

Method

Step 1 of 5

Preheat oven to 200°C. Line a baking tray with baking paper.

Step 2 of 5

Place pastry on tray. Spread with tomato paste or passata, leaving a 1.5cm border.

Toss vegetables in a bowl with oil. Season to taste with salt and pepper and stock powder.

Step 4 of 5

Arrange vegetables over pastry. Top with cheese. Fold over edges of the pastry.

Step 5 of 5

Bake for 20 minutes or until vegetables are cooked through and pastry is golden. Serve scattered with basil leaves.
