  • 2 cups wholemeal plain flour, plus extra for dusting
  • 150grams dairy-free spread
  • 450grams firm tofu, diced
  • 1 cup Woolworths unsweetened almond milk
  • 1tablespoons cornflour
  • 2tablespoons nutritional yeast flakes
  • 3 cloves garlic, crushed
  • 320grams mix-a-mato tomatoes, halved
  • 5milliliter olive oil cooking spray
  • 1/2 bunch bunch basil, leaves picked
  • 2teaspoons extra virgin olive oil

Did you know it's so easy to make a vegan quiche? Try this vegan quiche recipe that tastes just as beautiful as it looks.

Blind baking your pastry case keeps it crisp and prevents the base from becoming soggy from the filling.

Method

Step 1 of 5

Preheat oven to 190°C/170°C fan-forced. Grease a 25cm (3.5cm deep) round fluted tart pan with a removable base.

Step 2 of 5

Place flour and spread in a food processor and process until fine crumbs form. Add cup iced water. Process until just combined. Turn dough out onto a lightly floured surface. Shape into a flattened disc. Wrap in baking paper and refrigerate for 20 minutes.

Remove dough from fridge and roll out between 2 sheets of baking paper until 5mm thick. Line base and side of pan with pastry, then trim excess pastry. Line pastry with baking paper. Fill with pastry weights or uncooked rice. Place on a baking tray. Bake for 15 minutes or until light golden. Remove weights and paper. Bake for a further 15 minutes or until pastry is golden and cooked.

Meanwhile, place tofu, milk, cornflour, yeast flakes and garlic in a food processor. Process, scraping down sides occasionally, until mixture is smooth and combined. Season with pepper.

Step 5 of 5

Pour tofu mixture over base. Top with tomato, cut-side up, pushing down gently to secure. Spray with oil, then bake for 35 minutes or until lightly golden and just set. Stand for 30 minutes to cool before removing from pan. Top with basil and drizzle over oil. Season with pepper and serve.
