- 70grams Spinach
- 4 Eggs
- 1/2 cup Cream
- 1/3 cup Shredded cheese

Quick and easy vegetarian frittatas for the whole family.
Method
Step 1 of 7
Peel and cut the sweet potato into small squares. Cover with plastic wrap and microwave on high for 6 minutes.
Step 2 of 7
Meanwhile, cut the red onion and capsicum and sauté over medium heat until soft.
Step 3 of 7
Preheat oven to 180° and spray 12 muffin tins with non stick spray.
Step 4 of 7
Add spinach and sweet potato to the capsicum and onion. Stir over low heat until spinach is just starting to wilt.
Step 5 of 7
Whisk eggs in jug with cream.
Step 6 of 7
Evenly disperse veggies to greased tray and pour egg mixture on top.
Step 7 of 7
Sprinkle each with cheese and bake for 25 minutes.
