Black Bean Salsa
  • 1/2 red onion (finely diced)
  • 400grams no added salt black beans, rinsed (drained)
  • 200grams sweet Solanato tomatoes (chopped)
  • 1 red capsicum, deseeded (thickly sliced)
  • 2 fresh corn cobs (husks removed)
  • 1/2 cup light sour cream
  • 60grams baby rocket
  • 2teaspoons olive oil
  • 8 free range eggs
  • 1/2 cup grated light tasty cheese

Method

Step 1 of 5

Preheat oven grill on high. Heat oil in a large heavy-based ovenproof frying pan over high heat. Add corn cobs and capsicum. Cook for 8 minutes, turning often, or until lightly charred. Remove corn from pan and slice off kernels.

Reduce heat to medium-low. Whisk eggs and sour cream together and season. Pour into pan over capsicum. Scatter over half the rocket, corn kernels and cheese. Cook for 12 minutes or until egg has set on base and around edges of pan.

Grill for 8 minutes or until golden on top and just set in centre.

To make the black bean salsa, combine beans, tomato and onion in a medium bowl. Season and stir to combine.

Step 5 of 5

Serve frittata with salsa and remaining rocket.
