Description

After a quick, easy and delicious stir-fry? You'll only spend 15 minutes whipping up this tasty meal with thick udon noodles and succulent pork fillet.

Method

Step 1 of 4

Heat a frying pan over medium heat. Add oil and pork and cook for 2 minutes on each side. Transfer to a plate, cover loosely with foil and set aside to rest.

Step 2 of 4

Add ginger and mushroom to pan and fry for 2-3 minutes, stirring regularly, or until lightly golden.

Step 3 of 4

In a bowl, whisk stock, soy and cornflour together. Add to pan with mushroom mixture and stir until thickened. Add noodles and cook for 1 minute to coat in sauce and heat through.

Step 4 of 4

Slice pork and add to pan with spring onion and spinach. Divide among bowls and serve.
