  • 1 bunch spring onions, green and white parts separated, thinly sliced

  • 1/4 cup salt-reduced soy sauce
  • 1/2 small green cabbage, shredded
  • 1 red capsicum, deseeded, thinly sliced
  • 450grams microwave brown rice
  • 4 free range eggs

Description

After a speedy dinner that's packed with flavour? This pork stir-fry boasts nutty brown rice, sweet capsicum, crunchy cabbage and a hint of heat.

Method

Step 1 of 5

Heat 1½ tbs oil in a large, deep frying pan over high heat. Cook chilli, garlic and white part of onion for 30 seconds, stirring, or until fragrant.

Step 2 of 5

Add pork and cook for 3 minutes, stirring, or until pork starts to colour. Add 1 tbs soy sauce and cook for 1 minute or until pork starts to caramelise.

Step 3 of 5

Add cabbage and capsicum, then cook for 2 minutes, stirring, or until softened. Add rice and remaining soy sauce, then cook for 2 minutes, stirring, or until rice starts to brown. Season with pepper.

Step 4 of 5

Meanwhile, heat remaining oil in a large non-stick frying pan over medium heat. Crack eggs into pan and cook for 3 minutes or until whites are set.

Step 5 of 5

Divide pork and cabbage stir-fry in bowls, top with eggs and green part of onion, season with pepper and serve.
