- 3 leeks, trimmed, thinly sliced
- 2 cloves garlic, finely chopped
- 1 cup frozen peas
- 460grams Woolworths Tasmanian salmon portions, skin off
- 1 lemon, sliced
- 1/2 punnet dill, sprigs picked

Description
This easy family dinner is simple and delicious. The flaky salmon fillets and creamy potato are a perfect pairing in this oven-baked dish.
Method
Step 1 of 3
Preheat oven to 220°C/200°C fan-forced. Place potato in a large roasting pan. Drizzle over half of the oil and toss to coat. Bake for 20 minutes or until just golden.
Step 2 of 3
Top potato with leek and garlic, then drizzle over remaining oil. Bake for 10 minutes or until leek is tender.
Step 3 of 3
Add peas, salmon and lemon to pan. Bake for 10 minutes or until salmon is cooked to your liking. Season with pepper. Serve scattered with dill.
