- 500grams skinless, boneless chicken thighs
- 3 cans diced tomatoes
- 250grams penne pasta
- 2-3 cloves garlic, minced
- 1 pinch salt, to taste
- 1 pinch pepper, to taste
- 2tablespoons tomato sauce
- 500grams sour cream
- 1/2teaspoons Italian seasoning
- 3 cups spinach, packed tightly
- 1/2 cup parmesan
- 200milliliter Mrs balls chutney
- 1 onion, diced
- 4 fresh tomatoes, diced
- 100milliliter chicken stock
- 1 large carrot, grated
- 1 large zucchini, grated

This is one of those dinners that has evolved over the years
Method
Step 1 of 7
Cook the chicken for about 5 minutes/side - don't cook it all the way through as it will cook again later. Season well
Step 2 of 7
Once chicken is nearly cooked - remove it from pan and cut into pieces. Set aside
Step 3 of 7
Cook onions, carrots and zucchini until soft, add tins of tomato, Mrs Balls Chutney, tomato sauce/paste, garlic and Italian seasoning. Simmer for about 5 minutes
Step 4 of 7
Add pasta (yes straight out of the bag), fresh tomatoes and 100ml of chicken stock
Put lid on and cook until pasta is al dente (you will need to check on it regularly to ensure that it is not sticking). If you do need more liquid - use more stock
Step 5 of 7
Once the pasta is nearly cooked - add the chicken back to the pan
Step 6 of 7
Add spinach and parmesan and mix in well
Step 7 of 7
Turn off heat and mix in the sour cream - once this is well mixed in - the heat can be put back on to a low heat. Serve hot
