For the sauce/marinade
  • 1 2/3 cup vegetable stock
  • 1/4 cup sake
  • 1tablespoons brown sugar
  • 1/3-plus one extra tsp cup mirin
  • 2 medium shallots, diced
  • 1tablespoons ginger, finely chopped
  • 1/4 cup water
  • 1/3 cup soy sauce
  • 400grams tofu, sliced into chunks
  • 1tablespoons canola oil

Description

The tofu takes on the smoky flavours of the marinade that makes this Japanese inspired skewer so delicious.

Method

Step 1 of 5

In a saucepan on a medium heat, fry all of the sauce/marinade ingredients for 20 minutes until the sauce reduces by half.

Step 2 of 5

Once the sauce has thickened, remove from the heat and separate into 2 bowls. 1 is for marinating the skewers and the other is for serving as a dip.

Now on skewers, alternate the tofu and onion chunks. Heat up a chargrill to a medium heat. Drizzle the Tofu with canola oil before grilling.

Fry the Tofu skewers on the chargrill for 5 minutes while rotating. Baste the Tofu with the marinade while cooking and rotate.

Step 5 of 5

Repeat the basting process about 3 to 4 times until the Tofu is cooked fully though. Serve the skewers with the extra dipping sauce on the side and a choice of condiments.
