  • 375grams satay-style chicken kebabs, meat removed from skewers
  • 150grams green beans, trim ends, halved diagonally
  • 1/3 bunch coriander, leaves picked
  • 450grams pkt microwave jasmine rice, heated
  • 1 mango, finely chopped

Description

This Thai-inspired recipe balances the spiciness of satay chicken with the sweetness of mango, delivering a flavour burst that’s simple and sophisticated.

Method

Step 1 of 4

Heat a large non-stick frying pan over medium-high heat. Spray chicken with oil. Add chicken and cook, stirring, for 6 minutes or until cooked and browned. Transfer to a bowl.

Step 2 of 4

Add beans and 2 tbs water to pan and cook, stirring for 2 minutes or until bright green.

Step 3 of 4

Return chicken to pan and toss for 1 minute or until heated and combined. Add half of the coriander. Season.

Step 4 of 4

Spoon rice into serving bowls. Top with chicken, mango and remaining coriander. Serve.
