  • 1 small carrot, grated
  • 1/2 small Lebanese cucumber, diced
  • 6 cherry tomatoes, quartered
  • 4 wholemeal stand ‘n stuff mini tacos
  • 1/2 cup canned chickpeas, drained
  • 1 lemon, 1 tbs juiced
  • 2teaspoons olive oil
  • 1 cup chicken breast, cooked, chopped

Method

Step 1 of 4

Combine chicken, chickpeas, tomato, cucumber and carrot in a bowl.

Step 2 of 4

Add combined lemon juice and olive oil. Season to taste and toss through salad.

Step 3 of 4

Pack chicken salad in a container with a freezer pack. Pack tacos separately and salsa in a small air-tight container.

Step 4 of 4

When ready to eat, fill tacos with salad mix.
