  • 1 lemon juice, 2 tbs juiced

Looking for a delicious cookie to make a loved one? Get creative with this sugar cookies recipe. They are perfect to be wrapped up and gifted!

Method

Step 1 of 3

Place butter, caster sugar and flour in a food processor. Process until mixture resembles fine crumbs. Add egg and vanilla, then process until mixture just comes together. Turn dough out onto a lightly floured surface and knead gently until smooth. Divide mixture into 2 portions and shape into 2 discs. Wrap in baking paper and refrigerate for 30 minutes to rest.

Preheat oven to 170°C/150°C fan-forced. Line 2 large baking trays with baking paper. Roll 1 dough portion between 2 sheets of baking paper until 5mm thick. Using a 6cm round cutter, cut rounds from dough, re-rolling and cutting scraps. Place on trays, 2cm apart, and bake, 1 tray at a time, for 10 minutes or until cookies are just firm to touch, but not browned. Transfer to a wire rack to cool. Repeat with remaining dough.

Step 3 of 3

Sift icing sugar into a bowl. Add lemon juice and stir until smooth. Spread tops of cookies with icing. Sprinkle with 100s and 1000s, if using, then set aside for 1 hour or until set. Serve.
