Description

Enjoy your own high tea at home with these creamy, sweet specialty sandwiches packed with juicy fresh Australian strawberries and a sweet cream-cheese filling.

Method

Step 1 of 4

Whisk cream cheese and sugar in a stand mixer bowl fitted with a whisk attachment for 20 seconds or until smooth. Add cream and whisk for a further 1-2 minutes or until stiff peaks form.

Step 2 of 4

Lay a 30cm-square piece of baking paper on a clean work surface. Place 1 bread slice in the middle. Spoon ⅓ cup cream mixture in the centre and use a palette knife to evenly smooth the top. Place 3 strawberries on the diagonal. Place another 2 strawberries on either side from the centre to form a cross shape. Add 1/3 cup cream mixture on top and smooth to fill any gaps. Top with 1 bread slice, then push down gently, scrape sides and wrap tightly to secure. Repeat with remaining 6 bread slices.

Refrigerate sandwiches for 30 minutes or until cream mixture is firmed slightly.

Step 4 of 4

Using a sharp knife, cut sandwiches in half on the diagonal. Place on a platter and serve.
