  • 1tablespoons cornflour

  • 1/2teaspoons white pepper
  • 24 gow gee wrappers (round)
  • 4 dried shiitake mushrooms
  • 2 spring onions, finely chopped
  • 1tablespoons oyster sauce
  • 1tablespoons soy sauce (to serve)
  • 250grams pork mince
  • 200grams green prawn meat, finely chopped
  • 1tablespoons peanut oil

Method

Step 1 of 5

Soak mushrooms in boiling water for 20 minutes until soft.

Step 2 of 5

Meanwhile, combine pork, prawn meat, spring onions, sugar, oyster sauce, cornflour, pepper and oil in a bowl. Mix together well. Set aside for 20 minutes. Drain mushrooms, discard stems and chop finely. Stir into mince mixture.

Step 3 of 5

Lay 6 wrappers on a board and place 2 tbs of the mixture onto the centre of each wrapper. Gather up wrapper so the sides pleat and the filling is visible at the top. Repeat with remaining wrappers and filling to make 24.

Step 4 of 5

Steam dumplings, in batches, in a bamboo basket over a wok of simmering water for about 8 minutes until filling is cooked. Electric steamer will take the same amount of time to cook each dumpling.

Step 5 of 5

Serve with soy sauce. Note: When combining the meat mixture, it is much easier to use a disposable glove and mix it by hand.
