  • 50grams vermicelli noodles, cooked
  • 20 sheet spring roll pastry
  • 1 cup bean shoots
  • 1teaspoons fresh ginger
  • 1 large spring onion, finely chopped
  • 2tablespoons stir fry sauce sweet chilli
  • 1L olive oil (for deep frying)
  • 2 clove garlic, crushed
  • 150grams seafood stick

Method

Step 1 of 3

Combine all of the above ingredients except spring roll pastry in a large bowl and mix well.

Step 2 of 3

Place a sheet of pastry on a flat surface, top with 1 tablespoon of mixture then roll once. Tuck ends in then continue rolling. Brush ends with a little water to seal, then repeat with remaining rolls.

Step 3 of 3

Deep fry in hot oil until golden (about 3–4 minutes) then serve with additional sweet chilli marinade, fresh lettuce and herbs.
