- 250grams fresh raw prawns, peeled, cleaned and chopped
- 1 shallot, thinly sliced
- 1 knob ginger, size of thumb nail, finely grated
- 1 clove garlic - finely grated
- 1/2teaspoons chinese five spice
- 8 sheet spring roll pastry, thawed 1/2 hr before using
- 1/2 cup cabbage, shredded or chopped finely
- 1/2 cup carrot, grated
- salt & pepper (to taste)

Quick and easy to make, crunchy and delicious to eat.
Instruction tip
Can use Turkey or Chicken Mince instead of the Prawns, is just as delicious.
Method
Step 1 of 8
Gather all ingredients together.
Step 2 of 8
Into a medium bowl add all ingredients and mix well. If using a deep fryer like I do, turn it on now.

On a flat surface, lay out one spring roll pastry, keep the remainder under a damp tea towel, add 1 1/2 tablespoons of mixture diagonally across one corner, brush opposite corner and down both sides with a little water. Fold in sides and roll up to enclose the filling.

Repeat process until all the mixture is used.

Once the deep fryer's light changes from red to green, we are good to go. I only add 4 in my basket at one time, as not to over crowd the fryer and lose temperature...... Could also cook the spring rolls in a medium size saucepan, just half filling it with oil......or if you have an air fryer.

Cook for five minutes, remove and drain on absorbent paper. Repeat the process with remaining spring rolls.

Cool for five minutes before serving, as the filling is extremely hot. I have burnt my mouth so many times because I'm impatient and want to eat straight away.

Serve with your choice of dipping sauce. We love soy and a very mild sweet chilli sauce. Enjoy!
