  • 500grams ricotta
  • 80grams parmesan cheese, grated
  • 100grams baby spinach, finally chopped
  • 1 egg
  • 1/4teaspoons salt and pepper (or to taste)
  • 1/4teaspoons nutmeg (optional)
  • 200grams bacon, diced (optional)
  • 4 sheet puff pastry, slightly thawed
  • 1/4 cup milk, brushing

Description

These spinach and ricotta rolls are delicious and so easy.

Method

Step 1 of 6

Preheat oven to 210°C. Line two trays with baking paper.

Step 2 of 6

Mix all ingredients together.

Step 3 of 6

Lay puff pastry on a flat bench. Cut in half to make two rectangles. Spoon some mixture down the middle of each rectangle, ensure it goes all the way to the end. Mixture is sticky and hard to make neat. That's ok though. Won't matter once rolled.

Step 4 of 6

Gently roll each half of the pastry ensuring the pastry covers up by at least 1-2 cm so they stay closed. Cut each 'log' into 4 even pieces. Place these onto the prepared trays.

Step 5 of 6

Pierce each roll with a fork and brush milk in with a pastry brush.

Step 6 of 6

Place into the oven (210°) for 25-30 minutes or until golden brown.
