  • 1tablespoons extra virgin olive oil
  • 1 red onion, quartered
  • 1/4 bunch coriander, sprigs picked

Description

Team marinated chicken drumsticks with corn cobs and potato wedges for a simple midweek meal where the oven does most of the work for you.

Method

Step 1 of 2

Preheat oven to 230°C/210°C fan-forced. Combine sauce, paprika and garlic in a large glass bowl. Add chicken and turn to coat.

Step 2 of 2

Arrange chicken, potatoes and corn on a large baking tray. Drizzle with oil and bake for 40 minutes, adding onion halfway through cooking, or until chicken is cooked and potatoes are golden. Serve topped with coriander.
