- 8 chicken thigh fillets
- 1/4 cup extra virgin olive oil
- 2tablespoons Woolworths Cajun seasoning
- 2tablespoons mustard powder
- 1 clove garlic, crushed
- 3 block corn cobs, cut in half
- 4 white washed potatoes, cut into wedges
- 2 limes
- 200milliliter tub light sour cream
- 1/3 cup tomato relish
- 1/2 bunch continental parsley, leaves picked, chopped
- 1tablespoons dried chilli flakes

Description
Light your own fire with this Cajun extravaganza. Lime juice, parsley, chilli and garlic make the chicken, corn and potatoes sing.
Method
Step 1 of 5
Combine chicken, half the oil, seasoning, mustard powder and garlic in a bowl. Cover. Refrigerate for 4 hours to marinate.
Step 2 of 5
Preheat a barbecue grill or chargrill pan over medium-high heat. Brush corn and potatoes with remaining oil. Add to grill. Cook, for 10 minutes on each side or until almost tender.
Step 3 of 5
Add chicken to the grill. Cook for 5 minutes on each side or until cooked through and browned. Transfer to a plate. Cover with foil. Rest for 5 minutes.
Step 4 of 5
Juice 1 lime. Combine sour cream and lime juice in a small bowl. Add relish and fold until just combined.
Step 5 of 5
Cut remaining lime into wedges. Arrange chicken, potatoes and corn on a serving platter. Sprinkle with parsley and chilli. Serve with tomato relish sour cream and lime wedges.
