  • 2 sweet corn cobs, husks removed
  • 5mL extra virgin olive oil cooking spray
  • 1 lime, halved
  • 1 large avocado, flesh removed
  • 1 red onion, halved, thinly sliced
  • 120grams Lemnos Plain Haloumi Cubes
  • 4 Mission Extra Soft Original Tortillas
  • 1 jalapeño, thinly sliced
  • 1/4 bunch coriander, sprigs picked

Description

Ideal for your next fakeaway night, these easy haloumi tacos bring together Mexican and Greek flavours to create a delightful bite.

Method

Step 1 of 4

Heat a large frying pan over medium-high heat. Spray corn with oil. Cook, turning often, for 15 minutes or until tender and golden. Transfer to a chopping board to cool slightly. Cut off the kernels.

Step 2 of 4

Meanwhile, juice half of the lime. Cut remaining half into 4 wedges. Mash avocado in a bowl. Stir in lime juice. Season.

Step 3 of 4

Add onion to frying pan, stirring for 3 minutes or until tender. Transfer to a plate. Spray the pan with oil, then add haloumi. Cook, turning once, for 2-3 minutes or until golden.

Step 4 of 4

Heat a chargrill over medium-high heat. Add tortillas. Cook for 1 minute each side or until golden. Divide among serving plates. Spread avocado mixture over tortillas. Top with corn, onion, haloumi, jalapeño and coriander. Serve with lime.
