  • 650grams chicken breast fillets
  • 35grams sachet taco seasoning
  • 1tablespoons smoked paprika
  • 2 red capsicums (halved, deseeded, cut into thick strips)
  • 1 green capsicum (halved, deseeded, cut into thick strips)
  • 1 red onion (cut into thin wedges)
  • 400grams can chopped tomatoes
  • 2tablespoons tomato paste
  • 1/2 bunch coriander (leaves picked, chopped, stalks roughly chopped)
  • 2tablespoons red wine vinegar
  • 3 cloves garlic (crushed)
  • 1/4 cup extra virgin olive oil
  • 400grams can black beans (rinsed, drained)
  • warmed mini flour tortillas (to serve)
  • avocado wedges (to serve)
  • pickled jalapeno (to serve)
  • 1/2 cup sour cream (to serve)

Description

It's time to get your fajitas on with this recipe for slow-cooker chicken fajitas. Serve with your choice of toppings for a fun family dinner.

Method

Step 1 of 3

Place chicken, seasoning and paprika in a 5.5L slow cooker, tossing chicken to coat. Top with capsicums, onion, tomatoes, paste, coriander stalks, vinegar and garlic. Stir to combine. Drizzle over oil and cook, covered, on low for 6 hours (or on high for 4 hours) or until chicken is cooked through and tender.

Step 2 of 3

Transfer chicken to a heatproof bowl and, using 2 forks, coarsely shred. Return chicken to slow cooker and stir in beans and coriander leaves. Season.

Step 3 of 3

To serve, top tortillas with chicken mixture, avocado, jalapeno and sour cream.
