- 1tablespoons canola oil
- 2 medium onions, peeled and sliced
- 3 cloves garlic, peeled and minced
- 200grams brown mushrooms, thickly sliced
- 1 beef stock cube
- 2teaspoons Dijon mustard
- 2tablespoons cornflour
- 200grams creme fraiche
- 3tablespoons parsley, fresh, chopped

Description
Slow cooking this beef stroganoff makes it a more economical dish with tender braising beef instead of more expensive fillet.
Method
Step 1 of 3
Heat the oil in a large pan on medium heat and cook the beef strips for 3-4 minutes to brown all over. Remove with a slotted spoon and tip into the slow cooker. Cook the onions for 5 minutes, add the garlic and cook for 1 minute then tip into the slow cooker.
Step 2 of 3
Crumble in the beef stock cube, add cornflour and Dijon mustard and mix to coat the beef. Pour in enough water to cover the beef and cook on high for 3 hours.
Step 3 of 3
Add the mushrooms and creme fraiche, stir well, cover and cook for 1 more hour, adding more water if necessary. Season to taste and serve with fresh parsley.
