  • 1tablespoons vegetable oil
  • 1 brown onion, finely chopped
  • 3 cloves garlic, sliced
  • 2teaspoons turmeric
  • 1 1/2teaspoons ground coriander
  • 1/3 cup yellow curry paste
  • 2 cups Woolworths salt-reduced chicken stock
  • 400mL coconut cream
  • 500grams skinless chicken thigh fillets, trimmed
  • 2tablespoons cornflour
  • 1kilograms baby white potatoes, halved
  • 150grams green beans, trimmed, halved
  • 1/2 punnet Thai basil, leaves picked
  • 1/4 cup fried shallots
  • 1 long green chilli, sliced

Description

Infused with the richness of coconut milk and a blend of fragrant spices, this warming slow-cooked chicken dish will become a winter staple. It's easy on the wallet, too.

Prepping tip:
If your slow cooker doesn’t have a ‘sauté’ mode, cook step 1 in a large, deep frying pan over medium-high heat. Then add mixture to slow cooker and continue with the recipe.

Method

Step 1 of 4

Heat oil in the bowl of a 5.5L slow cooker switched on ‘sauté’ mode. Cook onion and garlic for 5 minutes or until softened. Stir in turmeric and coriander and cook for a further 2 minutes or until fragrant. Add paste, stock and cream and stir to combine.

Step 2 of 4

Toss chicken in cornflour and add to slow cooker. Add potatoes and stir to combine. Cover with lid. Cook on high for 4 hours or until chicken and potatoes are cooked through and tender.

Step 3 of 4

Add beans and cook for a further 5 minutes. Remove chicken and place in a serving dish. Using 2 forks, shred chicken. Add sauce from slow cooker to chicken and stir to combine.

Step 4 of 4

Serve chicken topped with basil, shallots and chilli.
