  • 25grams Mexican-style street food seasoning
  • 2tablespoons cornflour
  • 1kilograms Woolworths beef brisket
  • 500mL beef stock
  • 1/2 cup barbecue sauce
  • 10 mini flour tortillas, warmed
  • 1/4 head red cabbage, shredded
  • 1 avocado, sliced
  • 1/2 red onion, thinly sliced
  • 1 long green chilli , thinly sliced
  • 1/2 bunch coriander, leaves picked
  • 1 lime, cut into wedges

Description

The succulent beef in these Mexican-inspired tacos pairs beautifully with crunchy cabbage, creamy avocado and spicy jalapeños for a midweek masterpiece.

Method

Step 1 of 3

Combine seasoning and cornflour in a large bowl. Coat beef in mixture to completely cover. Place beef in a bowl of a 5.5L slow cooker. Pour stock and sauce over beef. Cover with lid. Cook on ‘high’ for 6 hours or until meat is tender.

Step 2 of 3

Remove beef and place on a dish. Using 2 forks, shred beef. Continue to cook sauce in slow cooker, uncovered, for 10 minutes or until reduced. Transfer beef back to slow-cooker bowl and toss through the sauce.

Step 3 of 3

Place tortillas on a serving plate. Top each tortilla with one-quarter each of the cabbage, beef, avocado, onion, chilli and coriander. Serve with lime.
