- 750grams chicken thigh fillets, cut in half
- 1tablespoons extra virgin olive oil
- 1 1/2tablespoons MasterFoods Garlic Powder
- 1tablespoons MasterFoods Mixed Herb Blend
- 2tablespoons plain flour
- 1 brown onion, halved, cut into wedges
- 3 large potatoes, coarsely chopped
- 3 carrots, thickly sliced into rounds
- 1L Campbell’s Real Stock Chicken
- 3 dried bay leaves
- 1teaspoons MasterFoods Fennel Seeds
- 300grams green beans, cut in half diagonally
- 1/4 bunch continental parsley, leaves picked
- 6 slices seeded sourdough, toasted, to serve
Description
Use your handy slow cooker to make this deliciously rich French-style chicken casserole for an easy weeknight meal.
Method
Step 1 of 3
Place chicken in a large bowl. Add oil, garlic powder, herb blend and flour. Toss to evenly coat. Heat a large frying pan on medium-high heat. Cook chicken, in batches, for 2 minutes each side or until golden-brown. Transfer to the bowl of a 5L slow cooker and add onion, potato, carrot, stock, bay leaves and fennel seeds.

Cover with lid. Cook on ‘high’ for 6 hours or ‘low’ for 8 hours, until chicken is very tender, adding beans during the last 8 minutes of cooking.
Step 3 of 3
Spoon casserole into bowls. Sprinkle with parsley. Serve with bread.
