- 1.50kilograms beef shin, diced
- 3tablespoons plain flour
- 1tablespoons olive oil
- 1 large onion, peeled and chopped
- 2 large carrots, peeled and chopped.
- 2 sticks celery, chopped
- 2 large parsnips, peeled and chopped
- 1/2 bunch rosemary, about 5 sprigs
- 1L beef stock, made with 2 stock cubes
- 500grams puff pastry, block, ready rolled
- 2tablespoons butter, melted, for brushing
Method
Step 1 of 3
Toss the beef shin in flour in a large bowl, working in batches if necessary. Heat the oil in a large pan on medium high heat and cook the beef for 2-3 minutes to seal on all sides, working in batches. Place on a plate with a slotted spoon.

Drizzle more oil into the pan and cook the onions, carrots, celery, parsnips and rosemary for 8-10 minutes, until softened. Add the beef and pour over the stock. Cover and cook for 1.5 hours, remove the lid and cook for 30 minutes, until the beef is tender and sauce has reduced. Remove the rosemary sprigs.

Pre-heat the oven to 180°C. To assemble the pie, pour the beef and vegetable mix into a large ovenproof dish and top with puff pastry. Brush the pastry with butter, cut a steam hole in the middle and bake for 25 minutes, until golden.
