  • 2 mangoes, peeled, sliced
  • 1/3 cup mint leaves
  • 1/3 cup coriander leaves
  • 1 small red onion, thinly sliced into rounds
  • 1 lime juiced
  • 1 lime wedge (to serve)
  • 2tablespoons extra virgin olive oil
  • 1/3 cup toasted coconut flakes
  • 1/2teaspoons dried chilli flakes

Method

Step 1 of 2

Place mango, mint, coriander and onion in a bowl. Season, then toss to combine. Combine lime juice and oil in a small jug.

Divide salad among serving bowls. Drizzle dressing over salad and sprinkle with coconut and chilli flakes. Serve.
