Description

Make this spicy twist on chicken schnitzel for dinner this week. Coat the chicken in sesame seeds and Cajun seasoning, then pan-fry until delicious and golden.

Method

Step 1 of 3

Preheat oven to 220°C. Line 2 large baking trays with baking paper. Spread vegetables in a single layer on trays. Spray with oil, scatter over thyme and bake for 25 minutes or until tender.

Step 2 of 3

Meanwhile, halve chicken fillets through the centre to form 4 schnitzels. Coat chicken with combined sesame seeds and seasoning, pressing on firmly.

Step 3 of 3

Heat a frying pan over medium heat. Spray chicken with oil, add to pan and cook for 3 minutes on each side or until golden and cooked through. Serve chicken with roast vegetables.
