  • 1/2 white sourdough loaf, processed into coarse crumbs
  • 1/2 cup Macro pistachio kernels, finely chopped
  • 4 sprigs rosemary, finely chopped (save 2 sprigs to decorate)
  • 1 lemon, zested, juiced
  • 5grams frozen turkey, thawed
  • 3 lemons, sliced into rounds

Description

Learn how to make juicy roast turkey glazed in citrus butter. This incredible Christmas turkey will steal the show with its pistachio and rosemary stuffing.

Method

Step 1 of 6

Preheat oven to 200°C/180°C fan-forced. Line a large roasting pan with baking paper.

Step 2 of 6

Melt 100g butter in a large frying pan over low heat. Cook onion, stirring occasionally, for 8 minutes or until softened. Add garlic and cook, stirring, for 1 minute or until fragrant. Transfer to a large bowl. Add bread, pistachio and half of the chopped rosemary. Season and stir until well combined. Set aside to cool slightly.

Place remaining butter and chopped rosemary, zest and lemon juice in a small saucepan over low heat for 2 minutes, stirring, or until melted and combined.

Pat turkey dry, inside and out, with paper towels. Loosely fill front and back cavities with bread mixture. Secure front cavity with toothpicks, and legs with unwaxed kitchen string. Tuck wings under turkey, then place in pan and brush with citrus butter. Cover with baking paper, then foil. Bake for 2 hours 30 minutes (allow 40 minutes per kilogram), basting every 30 minutes.

Remove and discard baking paper and foil. Add lemon slices to pan. Bake for 30 minutes or until turkey is golden and juices run clear when thigh is pierced with a skewer, and lemon slices have caramelised.

Cover loosely with foil and allow to rest for 20 minutes. Decorate turkey with extra rosemary sprigs, then serve with lemon slices.
