- 1 pinch salt
- 1 pinch freshly ground black pepper
- 4-5kilograms turkey, with giblets
- 25grams butter
- 1 handful thyme sprigs
Description
Cooked as it is here, a turkey will be juicy and delicious. Larger birds are much more difficult to cook correctly.
Method
Step 1 of 4
Preheat the oven to 160°C (Gas 3). Remove any giblets from inside the turkey and use them to make a stock.
Step 2 of 4
Weigh the turkey, so you can calculate its cooking time, then place it in a large roasting tin. Smear the breast with the butter, and season the bird well inside and out. Pop the thyme into the cavity.
Step 3 of 4
Place greaseproof paper over the breast of the turkey, then cover it with a large sheet of foil, sealing it to the roasting tin so no steam will escape.
Step 4 of 4
Roast the turkey for 15 minutes per 450g of weight. Remove the foil for the last 30 minutes and increase the oven temperature to 200°C (Gas 6), so the skin can brown nicely. Remove the turkey from the oven and rest it, covered in foil, for at least 30 minutes before serving.
