- 200grams dark cooking chocolate
- 60grams butter
- 2tablespoons white rum
- 1/2 cup thickened cream, whipped (to serve)
- 16 chocolate wafer biscuits (to serve)
- 150grams marshmallows
- 4 eggs

Method
Step 1 of 4
Break dark cooking chocolate into pieces and place into a heatproof bowl with marshmallows, butter and water. Place over a saucepan of simmering water and stir until melted. Remove from heat and leave to cool.

Meanwhile, separate 4 eggs and beat egg yolks and rum into cooled chocolate mixture until smooth and glossy.
Step 3 of 4
In a clean bowl, beat egg whites until stiff peaks form. Gently fold into chocolate.
Step 4 of 4
Spoon into serving dishes or glasses and chill for about 2 hours. To serve, top with whipped cream, extra grate chocolate and chocolate wafer biscuits.
