- 200grams dark chocolate (broken into pieces, plus extra to shave)
- 2 free range eggs
- 2tablespoons caster sugar
- 500milliliter whipped cream (reserving 200ml whipped cream to serve)

Method
Step 1 of 4
Place chocolate in a microwave-safe bowl. Microwave on high for 2 minutes, stirring every 30 seconds. Set aside for 5 minutes to cool.

Add eggs and sugar to a large bowl. Beat with an electric mixer on high speed for 3 minutes, or until mixture is thick and pale and sugar has dissolved.
Step 3 of 4
Add chocolate mixture to egg mixture and use a spatula to gently fold until combined. Add 300ml whipped cream and gently fold until combined.
Step 4 of 4
Divide mousse mixture among four 1-cup capacity ramekins or serving glasses. Refrigerate for 1 hour or until set. Top with reserved whipped cream and chocolate shavings. Serve.
