- 1 mango, peeled and diced
- 1tablespoons mint (for garnish)
- 1/2 cup strawberries, sliced
- 1/2 cup blueberries
- 1/4 cup honey
- 2tablespoons lemon juice
- 2tablespoons almonds
- 1 cup tri colour quinoa
- 1tablespoons pepita seeds

Method
Step 1 of 4
Bring a pot of water to the boil and cook your quinoa according to packet instructions. Let quinoa cool to room temperature.
Step 2 of 4
In a large bowl, combine cooked quinoa, strawberries, blueberries, mango, seeds and nuts.
Step 3 of 4
To make the glaze: In a small bowl combine the honey and lemon juice.
Step 4 of 4
Drizzle over the fruit salad and toss to coat. Garnish with mint.
