- 500grams Woolworths simply steam microwavable baby white potatoes
- 1tablespoons extra virgin olive oil
- 460grams salmon portions, skin on
- 1 cup Greek-style yoghurt
- 1 small lemon, juiced
- 180grams baby leaves and beetroot
- 1/2 red onion, thinly sliced into rounds
- 100grams gherkins sweet spiced, drained, quartered lengthways
Description
Ready in 15 minutes, this speedy potato salad with flaked crispy-skinned salmon, salad leaves, gherkins and yoghurt dressing is the perfect midweek dinner.
Method
Step 1 of 4
Microwave potatoes according to packet instructions. Cool for 5 minutes.
Step 2 of 4
Meanwhile, heat oil in a large frying pan over medium heat. Cook salmon, skin-side down, for 4 minutes or until skin is crisp and golden. Turn and cook for 3 minutes for medium or until cooked to your liking. Transfer to a plate.

Remove potatoes from packaging and halve. Combine yoghurt and lemon juice in a small bowl.
Step 4 of 4
Place potato, salad leaves, onion and gherkins in a large bowl and toss to combine. Flake over salmon. Serve drizzled with yoghurt mixture and seasoned with pepper.
