Honey & Garlic Salmon With Nori-Seasoned Sweet Potato Chips

- 2 salmon fillets
- 2 sweet potatoes
- 3 spring onions
- 3 nori
- 2tablespoons rice wine vinegar
- 1 1/2teaspoons ground paprika
- 1/3 cup pure honey
- 1 lemon, to serve
- 5milliliter extra virgin olive oil spray
- 1 1/2tablespoons sesame seeds
- 2tablespoons olive oil
- 2 baby gem lettuce
- 3 cloves garlic, finely grated

Method
Step 1 of 6
Preheat oven to 200°C. Lightly spray a baking tray with oil and line with baking paper.
Step 2 of 6
Place salmon, flesh-side up, on a plate lined with paper towel. Refrigerate until required.

Toss potato in a bowl with oil and season. Place onto tray. Bake for 20-25 minutes or until golden. Process nori in a small food processor until finely chopped. Add sesame seeds and process to combine. Scatter nori mixture, reserving some, over wedges and bake for a further 10 minutes.

Meanwhile, spray salmon flesh with oil. Place, flesh-side down, into a cold, large non-stick frying pan. Place over high heat for 3 minutes or until it starts to sizzle. Turn salmon over and cook for a further 3-4 minutes or until just cooked through and skin is crisp. Transfer to a plate.

Return pan to heat. Add honey, garlic, vinegar and paprika. Bring to the boil then remove from heat and set aside to cool slightly. Return salmon, flesh-side down, to pan, swirling pan to coat salmon in sauce.

Serve salmon with potato wedges, spring onion, lettuce and lemon, and scatter over reserved nori mixture.
