Description

These lightly spiced muffins are perfectly moist and sweet with pumpkin puree and cinnamon.

Method

Step 1 of 3

Pre-heat the oven to 180°C. Line a 12 hole muffin tin with cases or parchment paper cups.

Step 2 of 3

Whisk the flour, baking powder, cinnamon, mixed spice and brown sugar together in a large bowl. Whisk the eggs, pumpkin and vanilla together in a jug and pour into the dry mix.

Step 3 of 3

Pour in the melted butter and whisk for 1-2 minutes with an electric hand whisk. Scoop the batter into the muffin tin and bake for 15 minutes until golden and risen.
