  • pinch salt
  • 1 1/2 cup pumpkin puree
  • 3 egg
  • 2tablespoons macadamia oil
  • 2tablespoons honey
  • 1/2 cup nuts and seeds mix
  • 1/4 cup chocolate, chopped (optional)
  • 1teaspoons ground ginger

Description

I love baking with pumpkin. This pumpkin bread is full of flavour with lots of spices, nuts and seeds.
Instruction tip
You can use your preferred nuts and chocolate.

Method

Step 1 of 6

Preheat the oven at 180°C (160°C, fan-forced). Line a loaf tin with sheet of baking paper.

Step 2 of 6

In a large bowl, mix pumpkin puree, eggs, oil and honey with a spatula.

Step 3 of 6

Add flour, spices, baking soda and salt into the bowl and mix until just combined. Add nuts and seeds (leave some for topping) and chocolate if using.

Step 4 of 6

Pour the mixture into the tin and smooth the surface. Sprinkle the reserved nuts and seeds on top.

Step 5 of 6

Bake in the oven for about one hour (check if a skewer comes clean when inserted). Cool on a wire rack until cool down completely.

Slice into pieces and enjoy.
