Description
These fluffy pancakes are packed with natural sweetness and warming flavour from pumpkin and cinnamon.
Method
Step 1 of 3
Whisk the flour, baking powder and cinnamon together in a large bowl. Mix the milk, pumpkin puree and egg yolk together in a jug.
Step 2 of 3
Make a well in the flour and pour in the milk mix, stirring well to combine. Whisk the egg white to stiff peaks in another bowl and tip into the batter. Fold the egg white in gently.
Step 3 of 3
Heat a little oil in a large, non-stick pan on medium heat and cook the pancake batter in batches, for 1-2 minutes on each side, until golden. Repeat with the rest of the oil and batter and serve with maple syrup.
