  • 1/3 cup plain flour
  • 300grams simply steam baby white potatoes, peeled
  • 2 lemon, 1 juiced 1tbs, 1 cut into wedges
  • 1 brown onion, thinly sliced
  • 1/2 cup flat-leaf parsley, finely chopped
  • 300grams orange sweet potatoes, peeled
  • 1/2 cup parmesan, finely grated
  • 5milliliter canola cooking spray
  • 300milliliter crème fraîche
  • 60grams rocket
  • 1tablespoons chives, finely chopped
  • 150grams rindless streaky bacon, cut into thin strips
  • 2 cloves garlic, crushed

Method

Step 1 of 4

Heat a non-stick frying pan over medium heat. Cook the bacon and onion, stirring, for 5 minutes or until onion softens. Remove and drain on paper towels.

Step 2 of 4

Meanwhile, grate all the potatoes into a large bowl lined with several layers of paper towel. Squeeze out excess moisture. Place into a large, clean, bowl. Add onion mixture, flour, garlic, parmesan and herbs. Season to taste. Toss to combine. Divide into 8 equal portions.

Step 3 of 4

Spray a large non-stick frying pan with oil and heat over medium heat. Add 4 portions of potato mix to pan, flattening with a spatula. Cook for 3-4 minutes each side, or until golden and tender. Remove from pan and cover to keep warm. Repeat with remaining portions.

Step 4 of 4

Meanwhile, combine crème fraîche, juice and salt and pepper in a small bowl. Transfer rosti to serving plates. Serve with crème fraîche, rocket leaves and lemon wedges.
