Method

Step 1 of 4

Combine plain flour, yeast and a tsp salt in a bowl. Stir in warm water and mix until well combined. Set aside for 2 hours in a warm spot to allow dough to rise.

Step 2 of 4

Divide dough into 30 pieces. Roll into a smooth ball and press on 30 anchovy fillets or olives into the centre of each.

Step 3 of 4

Fill deep saucepan with oil. Add a small piece of the dough to test if the oil is ready (it should bubble and turn golden in about 1 minute).

Step 4 of 4

Cook zeppole in batches until golden brown and cooked through. Drain zeppole on paper towel. Serve warm.
