- 2 carrots
- 1/2 pumpkin
- 2 eggs
- 1 cup plain flour
- 1/2 cup parmesan cheese, finely grated
- 1tablespoons paprika
- 1/2teaspoons black pepper
- 1/2teaspoons turmeric
- 1/2teaspoons onion salt
- 1/4teaspoons garlic salt

Description
Oven baked popcorn veggie bites with a zesty coating. A healthier alternative to deep fried.
Method
Step 1 of 5
Prepare the carrot and pumpkin to peel and dice into roughly 2 cm pieces.
Step 2 of 5
Mix together the flour, parmesan and spices in a large bowl.
Step 3 of 5
Whisk the eggs together in another bowl. Dip the pieces into the egg and then flour mix to place onto lined baking trays.
Step 4 of 5
Sprinkle with a little extra paprika or if you like it hot and spicy sprinkle with chilli flakes. Then spray lightly with oil.
Step 5 of 5
Bake on 200 degrees for 20 minutes then turn the pieces over to cook a further 15 minutes.
