- 1 cup white rum
- 1 small pineapple, skin removed
- 2tablespoons mint leaves (to serve)
- 2 stalk lemongrass, trimmed, sliced
- 1 handful kaffir lime leaves, chopped
- 1 cup caster sugar
- 1.50L sparkling mineral water

Method
Step 1 of 3
Combine sugar, water, lemongrass and lime leaves in a small saucepan over a medium heat. Stir until sugar dissolves and mixture comes to the boil. Simmer for 2 minutes. Remove from heat and stand allowing flavours to infuse. Strain mixture through a fine sieve.
Step 2 of 3
Pour mixture into the bowl of a food processor. Cut pineapple into quarters, remove core and roughly chop. Add to processor. Process mixture until pineapple is finely chopped. Strain through a fine sieve over a bowl.
Step 3 of 3
Combine strained pineapple juice, rum and mineral water in large jugs. Add ice and mint. Garnish with grilled pineapple and serve immediately.
