- 1teaspoons dried yeast
- 2tablespoons fresh mint leaves (to serve)
- 1tablespoons ground ginger
- 3/4 cup caster sugar
- 1/4 cup fresh lemon juice
Method
Step 1 of 2
Combine 1.25l boiling water, sugar, lemon juice, ginger and yeast in a large pot. Cover loosely with plastic wrap. Leave overnight at room temperature.
Step 2 of 2
Use a slotted spoon to skim off foam from surface, if necessary. Transfer to clean plastic bottles, discarding any sediment in the bottom, leaving a 4cm gap at the top of each bottle. Seal and chill.
