  • 1 medium cottage loaf
  • 125grams salami
  • 125grams sliced turkey
  • 1 handful basil leaves
  • 3 tomatoes, sliced
  • 150grams mozzarella cheese, drained and sliced
  • 1 small red onion, cut into rings
  • 2 handfuls rocket leaves
  • 75grams pitted black olives
  • 75grams Cheddar cheese, thinly sliced

Method

Step 1 of 3

Cut the top off the loaf, about 3.5 cm down from the top, and hollow out the inside of the loaf, pulling the soft bread out with your hands and leaving about a 2.5 cm edge.

Step 2 of 3

Start by layering the salami into the base of the hollowed-out loaf, then cover with the turkey slices. Place a layer of basil leaves on top of the turkey, then layer the tomato and mozzarella slices. Cover with the red onion rings and scatter over the rocket leaves. Top with the olives and finish with a layer of the Cheddar. Place the cottage loaf top back on and press down firmly.

Wrap in greaseproof paper and refrigerate until needed. Cut into wedges to serve.
