  • 200grams marinated feta in oil, drained, reserving cup oil
  • 1 bunch basil, leaves picked, stems finely chopped
  • 500grams pkt Woolworths RSPCA- approved chicken schnitzels
  • 250grams spiral pasta
  • 100grams tasty cheese, sliced

Description

Take classic chicken parmigiana flavours and give them a twist. Pre-crumbed chicken schnitzels are cooked with feta, tomatoes and pasta in this hearty pasta bake.

Method

Step 1 of 5

Preheat oven to 240°C/220°C fan-forced.

Step 2 of 5

Place tomatoes, paste, feta, basil stems and 1/4 cup feta oil in a large baking dish, tossing to combine. Place chicken over tomato mixture and bake for 20 minutes or until tomatoes have softened and chicken is cooked through.

Meanwhile, cook pasta in a large saucepan of boiling, salted water according to packet instructions. Drain.

Step 4 of 5

Preheat grill to high. Remove chicken from dish and transfer to a large plate. Add pasta to dish and stir to combine. Arrange chicken on top of pasta mixture. Top chicken with cheese and drizzle with remaining feta oil.

Step 5 of 5

Grill for 5 minutes or until cheese is golden and has melted. Season with pepper and serve scattered with basil leaves.
