  • 4 egg yolkes
  • 1/3 cup caster sugar
  • 2tablespoons hazelnuts, roasted, roughly chopped

Method

Step 1 of 3

Remove skin and pith from oranges. Segment over a bowl to catch juices.

Step 2 of 3

Roughly crush biscuits. Divide half of the crushed biscuits between 4 small glasses. Add half the orange segments and spoon over a little juice.

Step 3 of 3

Place yolks and sugar into a large heatproof bowl. Place bowl over a saucepan of simmering water, taking care that base of bowl does not touch the water. Whisk egg mixture for about 5 minutes until thick and foamy. Add marsala and continue whisking for about 8 minutes or until mixture is thick and coats the back of a spoon. Spoon half the mixture over oranges. Repeat layers. Sprinkle with hazelnuts. Serve.
